
Fixing Those Pesky Cold Edges in Big Bread Ovens
If you’ve spent any time with large-scale convection ovens, you know the frustration of “cold edges.” You pull out a tray and everything in the middle looks great, but the perimeter? Pale. Inconsistent. Just not right. It happens because air just doesn’t circulate perfectly in those massive spaces, and it leaves your crust and crumb looking like two different recipes. We found a way to fix this by tossing some short-wave infrared lamps into the heating mix. Why this actually works Traditional heaters are slow. They have to warm up the air, and then the air has to warm up the bread. It’s a middleman process. Infrared is different. It’s radiation. The heat hits the dough instantly. We use quartz-halogen tech because it packs a ton of punch into a tiny space. These lamps heat up in seconds, which means you can tweak the temperature on the fly. You can basically blast the edges of the oven with exactly what they need without accidentally turning the center of your load into croutons. The nuts and bolts We make these lamps out of high-purity quartz glass so the infrared light actually gets through. Inside, there’s a tungsten filament in a halogen cycle. That’s just a fancy way of saying the glass won’t turn black and cloudy over time. Depending on your control board, you can pick the voltage and wattage that fits. And since most of our bakery units are designed as drop-in replacements with standard connectors, you don’t have to rebuild your entire rack to get them wired in. It’s pretty straightforward. Putting it into practice When you add infrared to a convection setup, you get the best of both worlds. You have the steady, overall heat of the forced air, but you also have the surgical precision of radiation. But here’s the thing: these lamps are powerful. Really powerful. If you go too heavy on the wattage without slowing down your conveyor or adjusting the airflow, you’re going to scorch your bread. You have to find that sweet spot between the lamp’s output and how long the bread stays in the oven. Once you dial it in, though? That temperature gap between the edge and the center basically disappears.
