
Stop Waiting on Your Oven to Catch Up
Most convection ovens are just big boxes of hot air. The problem is that moving air is slow. If your kitchen or production line is lagging behind and you’re hitting a bottleneck, it’s usually because you’re spending way too much time waiting for the oven to get back up to temperature. We fix this by adding infrared (IR) heating lamps into the mix. It basically lets you skip the wait and hit your target heat instantly.
Why this actually works
Think about it like this: convection has to warm up the entire cavity of the oven before your food feels it. IR doesn’t care about the air. It uses electromagnetic waves to hit the product surface directly. By using shortwave IR lamps, the response is almost immediate. You can tighten up your whole production cycle because you aren’t standing around waiting for the heat to recover every time someone opens the oven door. It’s fast. Really fast. And that changes everything for your workflow.
The gear you’ll need
We usually go with quartz-halogen tubes. They pack a ton of power into a tiny space. Depending on your voltage, you can wire them in parallel or series—pretty straightforward stuff. But here’s the thing: you can’t just crank the wattage to infinity. While higher wattage means more heat, it also puts a lot of stress on your reflectors and the oven housing. If your ventilation isn’t up to the task, you’re going to burn out your lamp sockets.
Making it work on the floor
When you combine IR with convection, you get the best of both worlds. The IR handles that quick sear or the perfect crust on top, while the circulating air makes sure the middle is cooked through. For the engineers out there, this is a great way to get more out of your current setup without having to drop a fortune on a bigger oven. Just a heads-up: keep an eye on the distance between the lamp and the product. If they’re too close, you’ll char the outside before the center is even warm. You’ll probably need to tweak your belt speed or your timers to account for all that extra energy.
