
Fixing Those Pesky Cold Edges in Large Deck Ovens
If you’ve spent any real time with a large deck oven, you know the struggle. The center is perfect, but the edges? They’re cold. Heat just leaks out of the perimeter faster than the oven can keep up. It’s frustrating. You end up with uneven crust colors and bake times that just don’t match across the deck. We solve this by using shortwave infrared lamps to plug that thermal gap. Why infrared? Here’s the thing: standard heating elements rely on convection and conduction. That’s a slow process. Infrared is different. It’s radiant energy that hits the target directly. By lining the perimeter with these lamps, we basically create a “thermal curtain.” It stops that temperature drop at the edges, but it doesn’t cook the center of your deck into a crisp. Getting the gear right We build these using tungsten filaments and high-purity quartz glass. But the real secret is the tuning. You can’t just throw a high-wattage lamp into a small space—you’ll burn your product. We spend a lot of time balancing the voltage and the length of the tube so the heat spreads evenly. It’s all about that sweet spot. The practical side of things Installing these is pretty straightforward. They work as drop-in replacements or simple add-ons to your current circuits. You can even wire them into your PID controller so they only kick in when the edge sensors feel a dip. Now, there are a couple of things to keep in mind. Infrared lamps don’t last as long as those heavy-duty cast-iron elements. You’re going to be swapping them out more often. Also, that radiant heat is intense. If you use standard wiring, the insulation will melt. Do yourself a favor: use high-temp fiberglass sleeving on your leads. It’s a small detail, but it keeps you from dealing with a short circuit in the middle of a rush. It’s a fair trade-off for getting the kind of fast, precise heat you need to keep your deck perfectly uniform.
