Everyone wants that textbook golden-brown crust. But as any baker knows, it’s not just about cranking up the oven temperature. It’s really about how the infrared (IR) radiation actually hits the dough.
Dialing in the Intensity
Here’s the thing: we play around with wattage and wavelength to get the color just right. Short-wave IR dives deep into the loaf. That’s great for some things, but for browning, we usually stick with medium-wave. It stays on the surface, which is where the magic happens. But you have to be careful. If you jam too much wattage into a small space, you’ll end up with a charred crust and a raw center. It’s a balancing act. We make sure the heat flow matches exactly how fast your conveyor belt is moving.
Making the Hardware Fit
Let’s be honest—standard, off-the-shelf lamps almost never fit the weird shapes of industrial bakery tunnels. That’s why we customize the length and voltage to fit your specific power rails. We use high-purity quartz because bakery environments are brutal, and the equipment needs to handle constant heating and cooling without snapping. Plus, we can add special coatings to the emitters. This lets us aim the heat right at the top of the bread instead of wasting it by heating up the entire oven chassis.
The Trade-offs
High-intensity emitters get the job done fast. But they can be hard on your gear. If you go for high-wattage tubes to speed up production, your switching relays are going to take a beating. You’ve also got to make sure your wiring can handle the peak current. If it can’t, you’ll get voltage drops, and that leads to those annoying pale spots on the bread. To fix that, we simply adjust the spacing of the emitters. No more “cold spots.” Just a consistent, beautiful brown across every single loaf.
